LBUSD Nutrition Staff Working on Healthy Menu Options

Members of the Laguna Beach Unified School District's nutrition department have been training to provide new, healthier menu options to students.

During the recent Professional Learning Community Professional Development series, nutrition staff has taken several classes which teach skills needed to focus on providing healthy, quality menus, reviewing procedures and policies in the department’s new Nutrition Services Employee Handbook and Menu Planning flowchart, and discussing updated vendor and food ordering procedures.

“One of our initiatives this year is to add even more scratch-cooked recipes to the menu," Shannon Soto, LBUSD director of fiscal services, said about the training series. "We reviewed large batch recipes and practiced how to convert the batch recipe measurements. The staff had hands on practice to put their new skills to the test by preparing one of the upcoming new recipe menu additions.”

Dawn Lincoln, a district food service worker, said she liked the classes because it's important for the workers to stay up to date on the new rules and regulations for the nutrition department.

“Our department is off to a great start offering healthy menu options for our students,” Soto added.

Additional training included the added features of the point-of-sale Meals Plus software training.
